Gluten Free Pizza (Rice Flour)

2 tbsp baking powder (check that it is gluten free, although most are)
2 cups rice flour
Cup and a half water
2 tbsp olive oil
2 tbsp basil
2 tbsp oregano
2 tbsp xanthan gum
1 tbsp salt


Mix all the dry ingredients into a large mixing bowl and add the water (warm water works better for some reason).
Knead the dough for 2-3 minutes. Divide into two. Roll on a flat surface that has a sprinkling of flour on it. Put the flat dough on an oiled oven tray (or a pizza tray if you have one). Cook the base in a hot oven (200 degrees in my fan-forced jobbie) for 10 minutes (or until it starts to go crispy). Add the toppings to the pizza base starting with tomato paste and whatever else you want (on one we had capsicum/pepper, mushroom, cooked onion and pumpkin - steamed in the microwave... and on the other we had ham and pineapple). Top with mozzarella cheese (you don't need much) then whack in the oven for 15 minutes or so until the cheese is melted and the base is crispy.
