Simple Salad
Salad
2 avocados
1 red capsicum/pepper
2 tomatoes
100g mixed baby spinach leaves/rocket
1 lebanese or telegraph cucumber
2 carrots
50g pine nuts
Dressing
50ml balsamic vinegar
30ml olive oil
1/2 tsp seeded french mustard
squeeze of a small piece of lemon
tad of sugar (tad is a small amount/say the other end of a teaspoon)
Cut up the avocados, chop the tomatoes, cucumber, red capsicum/pepper and place into the bowl. Wash the spinach/rocket and add.
Place nuts in a frying pan and cook them until light brown then stir through salad.
Make your dressing/dress the salad
You can either do this in an old jam jar or straight into the bowl...
Drizzle some balsamic vinegar (approx 25ml but try not to think/worry too much about it) into a salad bowl.
Pour a similar amount of good olive oil on top. Squeeze a little lemon/lime juice. A touch of seeded french mustard and 1/4 tsp of white sugar can aid flavour too... go crazy... experiment... have fun. Shake if in the jar (secure the lid!) or stir in bowl.
Feel the healthiness and goodness and don't be shy of having a second serve - think of all those nutrients... Of course, to maximise your health and the planet's try your hardest to use organic ingredients from your local farmers market, health food store, food cooperative, organic section of your local shop.
